Raise a Glass: Celebrating World Cocktail Day this May

As the clink of glasses echoes across the globe on World Cocktail Day (13th May), there’s no better place to raise a dram—or a carefully stirred concoction—than right here in Edinburgh. With its rich history, thriving bar scene, and ever-creative mixologists, Scotland’s capital city is quickly becoming one of the UK’s top cocktail destinations.

A Toast to Tradition—and Innovation

Edinburgh is no stranger to a good drink. With whisky flowing from every nook of the Royal Mile and hidden speakeasies tucked away in the New Town, this is a city that respects tradition while embracing innovation.

Think beyond the dram: today’s Edinburgh bartenders are reimagining cocktails with Scottish botanicalslocal spirits, and even foraged ingredients from the Pentlands. Ever tried a negroni with a splash of Edinburgh Gin’s Rhubarb & Ginger Liqueur? Or a smoked Old Fashioned infused with Islay peat?

Where to Sip in Style

Whether you’re a local or just visiting, here are some top Edinburgh spots where you can celebrate World Cocktail Day in style:

  • Angels Share – Our bar, of course! We have some fabulous Scottish creations for you to try, and some great deals on select cocktials throughout the month of May!
  • Panda & Sons – Disguised as a vintage barbershop, this speakeasy offers world-class cocktails in a quirky, candlelit setting.
  • The Bon Vivant – A New Town favourite blending classic elegance with adventurous flavour profiles.
  • The Lucky Liquor Co. – Known for its ever-changing seasonal menu of 13 drinks, each one bold and beautifully crafted.
  • Hey Palu – A love letter to Italian drinking culture, with a Scottish soul. Don’t miss their amaro-based creations.

Make It at Home: The “Castle Sour”

Want to bring a taste of Edinburgh into your own home bar? Try this simple but elegant cocktail inspired by the city’s most iconic landmark:

Castle Sour

  • 50ml Scotch whisky (preferably a smooth Highland variety)
  • 25ml lemon juice
  • 15ml honey-ginger syrup (Edinburgh’s nod to warmth and spice)
  • Dash of Angostura bitters
  • Egg white (optional, for a silky texture)

Shake all ingredients vigorously with ice, then strain and shake again without ice (if using egg white) to froth. Serve in a rocks glass over ice, and garnish with a twist of lemon or a sprig of heather.

Slàinte to the Spirit of Edinburgh

World Cocktail Day is about more than just drinks—it’s a celebration of culture, creativity, and connection. And in Edinburgh, where centuries of history meet cutting-edge cocktail artistry, it’s the perfect excuse to toast the city’s spirited soul.

So whether you’re exploring candlelit bars, enjoying a dram with a view of the Castle, or mixing your own Highland-inspired creation at home, remember to lift your glass high and say it loud: Slàinte Mhath!
